食用方法:紅酒燴,慢煮,燜,煲湯, 咖喱, 滷水

咖哩燜牛坑腩
份量:2-3人份
材料:
牛坑腩 600克
薯仔 2個
洋蔥 1個
紅椒 2條
香茅 2條
蒜頭 4粒
紅蔥頭 2個
薑 4片
黑胡椒粒 2湯匙
月桂葉 2塊
調味料:
老抽 2茶匙
咖喱粉 2茶匙
咖喱醬 100克
椰漿 100毫升
糖 2湯匙(隨意)

1. 牛坑腩切件,加薑片、黑胡椒粒一同汆水5分鐘. 
2. 牛坑腩瀝乾後,老抽撈勻. 
3. 洋蔥、紅椒、薯仔切塊,起油鑊炒至半熟,盛起備.
4. 香茅、紅蔥頭、蒜頭各切粒,油鑊爆香至金黃色,下咖喱醬炒香.
5. 加入牛腩兜勻,再加咖喱粉、2杯清水,燒滾後才加入月桂葉,以中小火燜煮40分鐘. 
6. 加薯仔、洋蔥、紅椒煮多10-15分鐘,最後下糖、椰漿拌勻即可.
